Stuffed Pepper Surprise - cooking recipe

Ingredients
    4 medium peppers, halved lengthwise, cored and seeded
    1/2 lb. ground chicken or beef
    1/2 c. instant rice
    1 (14.5 oz.) can diced tomatoes or tomato sauce
    1/2 c. water
    2 Tbsp. Parmesan cheese
Preparation
    Blanch pepper halves in boiling water for 2 minutes or until barely tender.
    Drain peppers.
    Lay cut side down on paper towel.
