Pear And Raisin Muffins - cooking recipe

Ingredients
    1 1/3 c. unsifted all-purpose flour
    1/4 c. firmly packed light brown sugar
    1 Tbsp. double-acting baking powder
    1 1/2 tsp. ground cinnamon
    1/2 tsp. salt
    2 egg whites
    1 c. milk
    3 Tbsp. vegetable oil
    1 1/2 c. Oat Flakes cereal
    1/2 c. chopped, peeled, ripe, fresh pear
    1/2 c. raisins
Preparation
    Preheat oven to 400\u00b0.
    Grease twelve 2 1/2 x 1 1/4-inch muffin-pan cups (1/3 cup); set aside.
    In a medium bowl, combine flour, sugar, baking powder, cinnamon and salt.
    In a small bowl, lightly beat egg whites.
    Stir in milk and oil.
    Add to flour mixture, stirring just enough to moisten flour.
    Mix in cereal, pear and raisins.
    Fill prepared muffin-pan cups about 2/3 full. Bake until a toothpick inserted in center comes out clean, 12 to 15 minutes.
    Makes 12 muffins.
