Rice Pilaf - cooking recipe

Ingredients
    3/4 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped fresh mushrooms (optional)
    1 c. water
    1/2 c. uncooked lentils
    1/2 tsp. garlic powder
    1 (16 oz.) can 1/3 less sodium chicken broth
    2/3 c. uncooked rice (basmati)
Preparation
    Coat a saucepan with vegetable cooking spray; place over medium heat until hot.
    Add onion and next 2 ingredients; saute 3 minutes until tender.
    Add water and next 3 ingredients.
    Bring to boil; cook 2 minutes.
    Cover and reduce heat; simmer 20 minutes. Add rice and simmer for 20 more minutes, or until rice is done and lentils are tender.
    Stir well.
    Serves 4.
