Baked Butter Beans - cooking recipe

2 (1 lb.) cans butter beans, drained
1 Tbsp. margarine
2 Tbsp. minced onion
2 Tbsp. minced green pepper
1 tsp. prepared mustard
1 Tbsp. brown sugar
1 Tbsp. vinegar
1 can tomato soup (undiluted)
Preparation

Drain beans; let bean liquid settle and then measure 1/4 cup of the clear liquid and reserve.
In
a medium skillet, melt butter; add onion and green pepper and cook until wilted.
Stir in mustard, sugar and vinegar, then tomato soup and reserved 1/4 cup bean liquid.
Heat.
Turn beans into a 1-quart casserole; pour the tomato sauce over them.
Put bacon slices on top of this if desired.
Bake, uncovered, in 375\u00b0 oven for 45 minutes or longer if you want them cooked down more.
