Chickpea Salad - cooking recipe

Ingredients
    2 c. chickpeas
    1/2 lb. diced Mozzarella cheese
    6 oz. jar roasted peppers, drained and cut into strips
    1 c. paper thin sliced zucchini
    1/4 c. olive oil
    2 Tbsp. wine vinegar (to taste)
    2 Tbsp. chopped fresh parsley
    1/2 tsp. dried oregano
    dash of pepper
Preparation
    Combine all ingredients and let stand at room temperature for 30 minutes to 1 hour.
