Chicken And Rice Casserole - cooking recipe

Ingredients
    2 1/2 lb. chicken, cut up
    1 c. uncooked long grain rice
    3 c. boiling water
    2 tsp. salt
    1 tsp. poultry seasoning
    1/4 tsp. black pepper
    1 bay leaf
    1/2 c. minced onion
    1 Tbsp. lemon juice
Preparation
    Preheat oven to 325\u00b0.
    Combine all ingredients and turn into 2-quart casserole.
    Cover and bake until rice and chicken are tender, about 1 1/4 hours.
    During cooking, add water if necessary to keep rice moist.
