Lemon Walnut Muffins - cooking recipe
Ingredients

1 c. sugar
1/2 c. softened butter or margarine
2 eggs
1 c. plain yogurt or 7/8 c. buttermilk
2 Tbsp. grated lemon peel
3/4 tsp. salt
1 tsp. soda
1 1/2 c. coarsely chopped walnuts
2 c. all-purpose flour
Preparation

Cream the sugar and softened butter or margarine until pale and fluffy. Beat in the eggs, one at a time, then the yogurt or buttermilk, lemon peel, salt, soda and walnuts.
Gradually add the flour, mixing until well blended.
Spoon into greased or paper lined 2 3/4-inch muffin cups. Bake at 375\u00b0 for 18 to 20 minutes until springy to the touch.
Makes 18 muffins.
