Italian Ragout - cooking recipe
Ingredients

1 lb. sweet or hot sausage
2 green peppers, chopped
1 onion, chopped
1 small pkg. mushrooms, sliced
2 (16 oz.) cans stewed tomatoes
2 c. bite size zucchini and summer squash
Preparation

Saute sausage (without casing) in olive oil.
Add peppers, onion and mushrooms.
Saute until onion is translucent and other vegetables are tender.
Pour sauteed mixture into large saucepan. Add stewed tomatoes and squash.
Simmer until squash is tender. Serve over rice or pasta or with Italian bread.
