Zeese Challah * - cooking recipe

2 pkg. active dry yeast
4 tsp. salt
3/4 c. honey
1 3/4 c. hot water (about 125~)
2 c. unbleached white enriched flour
1 1/4 c. oil
3 large eggs, room temperature
5 to 6 c. unbleached white enriched flour
Preparation

Measure yeast, salt, honey and hot water into large bowl and stir.
Mix in 2 cups flour, oil and eggs.
Add 4 more cups flour, 1 cup at a time; beat each cup in well with wooden spoon. Sprinkle 1/4 cup flour onto clean hard surface.
Knead in enough remaining flour to make dough silky and resilient, but still soft, 8 to 10 minutes.
Additional kneading after silky state.
Place dough into bowl with 1 tablespoon oil; turn to oil all sides.
