Fern'S Gazpacho - cooking recipe
Ingredients

6 c. canned plum tomatoes
1 onion, chopped
1/2 c. green pepper, chopped
1/2 c. cucumber, chopped
2 c. tomato juice
1/2 tsp. cumin
1 garlic clove, minced
1 Tbsp. salt
freshly ground pepper
1/4 c. olive ol
1/4 c. wine vinegar
1 c. finely chopped tomato-garlic croutons
Preparation

In a blender, puree tomatoes, onion, green pepper and cucumber.
Add tomato juice, cumin, garlic, salt and pepper.
Put in a bowl; cover and chill.
Before serving, add oil and vinegar. Serve accompanied by side dishes of chopped vegetables.
Garnish with croutons.
