72 Market Street Meat Loaf(From 72 Market Street In Venice) - cooking recipe
Ingredients

4 shallots, minced
2 Tbsp. butter
1 sprig thyme
1 bay leaf
dash crushed black pepper
1 c. dry white wine
1 c. veal or beef stock
1 c. chicken stock
salt and pepper
Preparation

Saute shallots in 1 tablespoon butter with thyme, bay leaf and black pepper.
Add white wine and simmer over high heat until reduced to glaze.
Add beef stock or veal stock and simmer over high heat until reduced by 1/3 or 1/2.
Stir in remaining 1 tablespoon butter and season to taste with salt and pepper.
Stir until butter melts and sauce blends in.
Discard bay leaf.
Serve with meat loaf.
Makes 1 cup.
