Ingredients

1/4 c. butter
2 tsp. grated lemon rind
1 c. sugar
2 egg yolks
2 Tbsp. flour
1/4 c. Grape-Nuts
2 Tbsp. lemon juice
1 c. milk
2 egg whites
Preparation

Beat whites until stiff.
Cream together the butter, rind and sugar.
Add and mix well the yolks, flour, Grape-Nuts, lemon juice and milk.
Fold in beaten whites.
Pour into a 5-cup souffle dish. Set in a pan of hot water.
Bake in a 325\u00b0 oven for 1 hour to 1 hour and 15 minutes.
Serve warm.
