Camp Taters - cooking recipe

Ingredients
    4 c. peeled, diced potatoes
    1 large onion
    1 large bell pepper, chopped
    2 Tbsp. oil
    salt and pepper to taste
    garlic powder to taste
Preparation
    Put oil into a heavy skillet over medium heat; dump vegetables in.
    Stir; cover tightly and simmer until tender.
    Take lid off and evaporate liquid.
    Cook and toss until bottom is lightly browned and crusty.
