Thai Lemon Grass Soup - cooking recipe

Ingredients
    2 chicken breasts, diced
    8 c. chicken broth
    10 hot chilies, just broken with pestle
    6 kaffir lime leaves
    4 lemon grass stems
    6 Tbsp. lime juice
    3 Tbsp. fish sauce
    6 slices galangal
    1/2 lb. straw mushrooms, halved
    1/2 c. cilantro, chopped
Preparation
    Heat chicken broth in a pot.
    Cut lemon grass into 1-inch lengths.
    Add lime leaves, lemon grass, galangal and chicken to the broth.
    Heat until chicken is cooked through, then add lime juice, fish sauce, chilies and mushrooms.
    Simmer for 5 minutes. Garnish with cilantro and serve.
