Vadai - cooking recipe
Ingredients

1 (16 oz.) pkg. yellow split peas
1 large onion
1 sweet pepper
2 green hot peppers
3 bay leaves
1 tsp. salt
1 qt. cooking oil
1/2 tsp. crushed red pepper (if desired)
Preparation

Soak the yellow split peas in warm water for 2 to 3 hours. Chop the onion and peppers into tiny pieces.
Crush the bay leaves.
Drain the peas and grind them in the blender (without adding water) to form a coarse paste.
Mix salt, onion, peppers, crushed pepper, crushed bay leaves and the paste thoroughly.
Shape the mixture into balls of 1-inch diameter and flatten them.
Heat the oil for deep frying and fry the flattened balls in the oil. Take them out when they turn to golden brown and spread them on sheets of paper towels.
These Vadais are good snacks for parties.
