Carrot Nut Loaf - cooking recipe

Ingredients
    1 1/2 c. all-purpose flour
    1 tsp. soda
    1/2 tsp. salt
    1 tsp. ground cinnamon
    3/4 c. oil
    2 eggs
    1 c. sugar
    1 c. grated carrots
    1 c. chopped pecans
Preparation
    Combine first 4 ingredients in small mixing bowl and set aside.
    Combine oil, eggs and sugar in a large mixing bowl and beat at medium speed of electric mixer for 1 minute.
    Add dry ingredients; mix at low speed just until blended.
    Fold in carrots and pecans.
    Batter will be stiff.
    Spoon batter into a greased and floured 8 1/2 x 4 1/2 x 3-inch loaf pan.
    Bake at 350\u00b0 for 1 hour and 25 minutes or until bread tests done.
    Cool for 10 minutes in pan; remove to wire rack and cool completely.
    Yields 1 loaf.
    Freezes well.
