Ingredients
    3 eggs
    1 1/2 c. sugar
    2 tsp. vanilla or 2 tsp. cinnamon
    1 tsp. baking soda
    1 tsp. baking powder
    1 c. oil
    1 c. grated zucchini
    3 c. flour
    1 tsp. salt
    1 c. chopped nuts or raisins (optional)
    1 c. milk
    1 cake yeast
    1/4 c. Spry (shortening)
    2 eggs, beaten
    1 c. potato water
    4 c. flour
    1/2 c. sugar
    1 tsp. salt
    1 c. potatoes, mashed
    1/3 c. shortening
    1/4 c. sugar
    1 egg, well beaten
    3/4 c. milk
    2 c. flour
    4 tsp. baking powder
    1/4 tsp. salt
Preparation
    In a large bowl, cream butter and sugar together.
    Add egg. Sift dry ingredients together in a separate bowl, then gradually add to first mixture.
    Stir in milk until dry look disappears. Drop batter into a greased muffin pan and bake in a 375\u00b0 oven for 25 minutes.
    Makes 12.
