Not Nearly So Complicated Chicken Luau - cooking recipe
Ingredients

16 chicken thighs
1 tsp. salt
6 lb. frozen leaf spinach, thawed
2 (12 oz.) cans frozen coconut milk
Preparation

Place chicken with water to cover in saucepan. Season with salt.
Simmer for 45 minutes or until chicken is tender.
Bone and cut into bite size pieces. Set aside. Squeeze excess water from spinach.
Combine spinach, chicken and coconut milk in saucepan. Heat until cooked, but do not boil. Serve hot!
