Hog Maw - cooking recipe

Ingredients
    1 well cleaned pig's belly (fresh; not smoked)
    1 onion, cut fine
    2 stalks celery (optional)
    3 to 4 c. diced potatoes, slightly cooked and cooled
    minced parsley
    black pepper
    1 tsp. salt
    1 1/2 to 2 lb. fresh loose sausage (not smoked, but fresh)
Preparation
    Mix potatoes, sausage, onion and seasonings (celery, if used) together.
    Take one end of pig's belly and sew shut.
    Then stuff pig's belly with ingredients.
    When stuffed, close end by sewing or baking nails.
    Cook in pot of salted water for about 45 minutes.
    Then put in roasting pan and bake in oven until golden brown, about 45 minutes in a 375\u00b0 oven (with lid on roaster).
