Carrot Casserole(Microwave) - cooking recipe

Ingredients
    4 c. sliced carrots
    2 Tbsp. water
    3/4 c. mayonnaise
    1/4 c. chopped onion
    2 Tbsp. prepared horseradish
    1/8 tsp. pepper
    1/4 tsp. salt
    14 saltine crackers, crushed
    1 Tbsp. butter
    2 Tbsp. parsley
    1/2 c. shredded cheese
Preparation
    In a 1 1/2-quart casserole, microcook carrots and water, covered on High for 6 to 8 minutes, stirring once; drain.
    Stir together mayonnaise, onion, horseradish, salt and pepper.
    Add to carrots in casserole and stir.
    In a bowl, toss together crushed crackers, butter and parsley.
    Sprinkle cracker mixture over carrots.
    Cook uncovered 3 minutes.
    Add cheese and cook 1 to 2 minutes or until cheese melts and mixture is heated through.
    Makes 6 to 8 servings.
