Eggplant Balls - cooking recipe

Ingredients
    3 Tbsp. olive oil
    3 cloves garlic, crushed
    1 large eggplant
    1 Tbsp. water
    1 c. seasoned bread crumbs
    parsley
    2 eggs, beaten
    1/2 c. grated Parmesan or Romano cheese
Preparation
    Heat
    oil
    and
    saute
    garlic.
    Add
    diced eggplant and water and cover.
    Cook until eggplant is soft.
    In mixing bowl combine eggplant, bread crumbs, parsley, eggs and cheese.
    Mix well and let stand for
    20
    minutes.
    Form into balls and fry, or bake on greased pan
    for 30 minutes at 325\u00b0.
    Sprinkle with cheese.
