Salmon Croquettes - cooking recipe

Ingredients
    3 Tbsp. margarine
    7 Tbsp. flour
    3/4 c. milk
    2 eggs
    1 1/2 c. flaked salmon
    1/2 tsp. salt
    3 c. fine, dry bread crumbs
Preparation
    Melt margarine in saucepan; blend in flour.
    Add milk gradually and cook about 3 minutes, stirring until a thick sauce is formed.
    Add the salmon, 1 egg and 1 cup bread crumbs.
    Mix and add salt.
    Mix thoroughly.
    Pour onto a platter and let cool. Chill in refrigerator for 1 hour or longer.
    Shape into desired shapes.
    Heat to medium-high heat a skillet half full of oil. Beat other egg in bowl.
    Spread remaining bread crumbs on platter. Dip each first in egg, then in bread crumbs.
    Fry until brown. Drain and serve.
