Jambalaya - cooking recipe

Ingredients
    2 lb. hot Jimmy Dean sausage
    2 large onions, chopped
    2 (6 oz.) pkg. long grain and wild rice mix
    1 lb. fresh mushrooms, sliced
    2 Tbsp. margarine or butter
    4 c. or 1 1/2 lb. any kind poultry (turkey, chicken, etc.), smoked or boiled
    2 (2 1/4 oz.) cans sliced black olives
    2 (8 1/2 oz.) cans artichoke hearts, sliced
    1/3 c. chopped green onions
Preparation
    In a large pot or Dutch oven, brown sausage.
    Add onions; cook until clear.
    Drain off any excess fat.
    Add wild rice to sausage; cook according to package directions.
