Creamy Asparagus Soup - cooking recipe
Ingredients

1/4 c. margarine or butter
1/2 c. chopped onion
1/2 c. chopped celery
2 Tbsp. flour
2 1/2 c. chicken broth (low salt)
2 (10 1/2 oz.) cans cut asparagus spears, drained
1 c. half and half or milk
Preparation

Melt margarine in large saucepan over medium heat.
Stir in onion and celery.
Cook 4 to 5 minutes or until vegetables are crisp-tender, stirring frequently.
Stir in flour; cook 1 minute, stirring constantly.
Stir in chicken broth; cook 5 to 7 minutes or
until thoroughly heated, stirring constantly.
Remove from heat; stir in asparagus.
Puree asparagus mixture.
Return to saucepan; stir in half and half.
Cook 5 to 8 minutes or until slightly thickened and thoroughly heated.
