Moe'S Rice - cooking recipe

Ingredients
    1 lb. wide grain enriched rice (Italian preferred)
    4 Tbsp. butter
    2 medium onions, chopped
    salt (optional)
    2 pt. chicken broth
    1 pt. water
    4 garlic cloves
    4 carrots
    1 bag frozen peas
    1 yellow pepper
    1 red pepper
    1/3 lb. Italian Jonesville sausage (3 pieces)
    curry powder to taste
    1/4 c. orange juice
Preparation
    Set oven at 400\u00b0.
    Remove casing from sausage; slice in two and bake sausage until done.
    Remove all grease with paper towel. Slice carrots.
    Chop peppers.
    Blanch carrots, peppers and peas in 4 tablespoons of water in microwave, separately.
    Use a large skillet and saute onions in butter until they start to brown.
    Add one pint of broth and let simmer.
    Stir in package of rice and when rice begins to boil, add second pint of broth and water.
    Add fresh squeezed garlic and salt, if desired.
    Add curry and orange juice.
    Add peppers and carrots.
    Let simmer for 12 minutes and add peas.
    Break sausage in tiny pieces and add.
    Stir constantly. Add additional water as needed.
    Serve with chopped olives and green onions on top.
