Oven Baked Rice - cooking recipe

Ingredients
    1 1/2 c. uncooked rice
    3 Tbsp. vegetable oil
    fresh mint (optional)
    3 tsp. instant chicken broth
    3 1/2 c. boiling water
Preparation
    Combine rice, broth and vegetable oil in a 2-quart casserole. Pour water over rice; stir and cover.
    Bake at 350\u00b0 for 40 minutes.
    Fluff before serving.
    Garnish with fresh mint, if desired.
