Crunchy Peanut Cole Slaw - cooking recipe
Ingredients

3 c. finely chopped green cabbage
1 c. finely chopped red cabbage
1 c. finely chopped celery
1 c. coarsely chopped cauliflower
1 c. sour cream
1 c. mayonnaise
2 Tbsp. sugar
1 tsp. salt
2 Tbsp. grated Parmesan cheese
1 tsp. tarragon vinegar
1/2 c. finely chopped cucumber
1/4 c. finely chopped green onion
1/4 c. chopped green pepper
1 Tbsp. butter
1/2 c. coarsely chopped, salted peanuts
Preparation

Toss the green and red cabbage, celery and cauliflower together and chill in plastic bag.
Combine sour cream, mayonnaise, sugar, salt, vinegar, cucumber, green onion and green pepper for the salad dressing and chill thoroughly.
Melt butter in small skillet; add chopped peanuts and heat until lightly browned.
Remove from the heat and immediately stir in the Parmesan cheese.
Set aside to cool.
Just before serving, toss chilled vegetables with the dressing and top with the peanut mixture.
