Stuffed Salmon Fillets - cooking recipe
Ingredients

6 salmon fillets (about 5 oz. each)
1 (10 oz.) pkg. baby spinach, coarsely chopped
3 Tbsp. prepared pesto
1 Tbsp. chopped sun-dried tomatoes
1 Tbsp. pine nuts
Preparation

Heat oven to 400\u00b0.
Make a slit 2/3 of the way through the center of each fillet; do not cut through fillet.
Season each fillet with salt and pepper.
In bowl, combine spinach, pesto, sun-dried tomatoes and pine nuts.
Spoon 1/3 cup mixture into each slit.
Arrange fillets on broiler pan coated with cooking spray. Roast 8 to 10 minutes or until spinach mixture is heated through. Makes 6 servings.
