Diabetic Blueberry Muffins - cooking recipe

1 c. blueberries (fresh or frozen)
1 c. Splenda sweetener
1/4 c. honey
1/4 tsp. salt
1 tsp. vanilla
2 tsp. baking powder
1/2 c. margarine, softened
2 c. all-purpose flour
1/2 c. skim milk
2 large eggs
Preparation

Preheat oven to 350\u00b0. Sift flour, baking powder and salt together. In another bowl, beat margarine, Splenda and honey with electric mixer until fluffy. Beat in eggs (one at a time) and add vanilla. Alternately stir in flour and milk. When blended, fold in berries and spoon batter into paper lined or greased muffin cups. Bake at 350\u00b0 for about 25 to 30 minutes or until golden brown. Cool in pan for 10 minutes before removing.
