Walnut Chicken Salad - cooking recipe
Ingredients

1 lb. (2 c.) prepared chicken salad
1/3 c. chopped walnuts, toasted *
1 tsp. Dijon mustard
1/2 tsp. dried tarragon leaves, crushed
1 small cantaloupe or honeydew melon, cut into quarters, lengthwise, seeds and rind removed
spinach or lettuce leaves
Preparation

In medium bowl, combine chicken salad, chopped walnuts, mustard and tarragon; mix well.
Cut each cantaloupe quarter lengthwise into 4 slices.
Arrange 4 slices on each of 4 spinach-lined plates. Spoon 1/2 cup chicken mixture onto each plate next to cantaloupe slices.
Garnish with walnut halves.
Makes 4 servings.
