Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 c. raw zucchini, grated
    3 c. flour
    1 tsp. salt
    1 tsp. soda
    2 tsp. vanilla
    1 tsp. cinnamon
    1/2 to 1 c. pecans
Preparation
    Beat eggs and add oil and sugar; mix well.
    Stir in grated zucchini.
    Add dry ingredients and stir again.
    Fold vanilla and nuts in.
    Pour into greased and floured loaf pans.
    Bake at 350\u00b0 for 45 minutes to 1 hour.
    Makes 2 medium loaves.
