Watermelon Rind Sweet Pickles - cooking recipe

Ingredients
    3 qt. watermelon rind (about 6 lb. unpared or 1/2 large melon)
    3/4 c. salt
    3 qt. water
    2 qt. (2 trays) ice cubes
    9 c. sugar
    3 c. white vinegar
    3 c. water
    1 Tbsp. (about 48) whole cloves
    6 (1-inch) pieces stick cinnamon
    1 lemon, thinly sliced with seeds removed
Preparation
    Remove all the green outer rind and all the red meat from the melon, leaving only the white rind.
    Cut into squares or strips about 3/4 to 1-inch thick.
    Cover with brine made by mixing salt with 3 quarts of cold water.
    Add ice cubes.
    Let stand 5 or 6 hours or overnight.
