Lemon Pie - cooking recipe
Ingredients

7 Tbsp. cornstarch
1 1/2 c. sugar
1/2 tsp. salt
2 c. boiling water
3 egg yolks, slightly beaten
1/4 c. lemon juice
2 Tbsp. butter
1 Tbsp. grated lemon rind
baked pie shell
Preparation

Combine the first 3 ingredients.
Add the boiling water; cook until thick, stirring constantly.
Add the slightly beaten egg yolks, into which a little of the mixture is blended.
Simmer for 2 minutes, stirring constantly.
Blend in the lemon juice, butter and lemon rind.
Turn cooled filling into baked pie shell.
Top with meringue.
Bake at 350\u00b0 until lightly browned.
