Veggie Chili - cooking recipe

Ingredients
    1 (16 oz.) can diced tomatoes
    1 (16 oz.) can red kidney beans
    1 small cooking onion, chopped
    1/2 c. finely chopped carrot
    1/4 c. finely chopped green pepper
    1/4 c. white rice
    1/4 tsp. cumin or to taste
    2 Tbsp. dried parsley or to taste
    2 Tbsp. chili powder or to taste
    2 tsp. garlic salt or chopped garlic cloves or to taste
    1 Tbsp. cocoa powder
    any veggie you like: corn, cauliflowerets, etc.
    2 Tbsp. tomato paste (add for thicker chili)
Preparation
    Saute onion, garlic and veggies until soft in 1/4 cup olive oil in a 2-quart pot on medium heat.
    Add remaining ingredients with enough water to cover, plus 1-inch more.
