Ingredients

1 lb. beef top round steak
3 Tbsp. vegetable oil
2 medium onions, sliced
1 medium green pepper, cut in strips
1 medium red pepper, cut in strips
1/4 lb. mushrooms, cut in quarters
1 large garlic clove, crushed
3/4 tsp. salt
1/2 c. creamy or chunky peanut butter
6 Tbsp. soy sauce
1/4 tsp. crushed red pepper flakes
1/2 c. water
hot cooked white rice
Preparation

Cut beef across the grain into thin strips.
Heat 2 tablespoons oil in 10-inch skillet over medium heat; add onions, pepper, mushrooms, garlic and salt and cook, stirring occasionally, 10 minutes until vegetables are tender.
With a slotted spoon, remove vegetables to bowl.
Add remaining tablespoon oil to skillet; add beef and cook over medium-high heat, stirring frequently, about 3 minutes, until browned.
Add peanut butter, 1/2 cup water, soy sauce, crushed red pepper flakes and vegetables.
Stir until mixture is blended and heated through. Makes 4 servings.
