Potato Soup - cooking recipe

Ingredients
    2 c. peeled potatoes, cut into 1/4-inch cubes
    2 medium onions, thinly sliced
    2 Tbsp. butter
    6 c. hot water or chicken or beef consomme
    salt
    freshly ground pepper
    2 to 3 slices fried crisp bacon, crumbled
    2 Tbsp. minced parsley, chives or dill weed
Preparation
    Combine potatoes, onions and butter in casserole.
    Cook, covered, over lowest possible heat for about 4 minutes or until potatoes are almost cooked.
    Stir frequently.
    If necessary, add 1 to 2 tablespoons hot water or consomme to prevent scorching.
    Add rest of the hot water or bouillon.
    Season with salt and pepper. Simmer, covered, for 5 to 10 minutes or until potatoes are cooked. Sprinkle with bacon and parsley.
