Apple Butter - cooking recipe

Ingredients
    60 lb. sugar
    1 bottle cinnamon
    21 gal. applesauce
Preparation
    Clean apple butter kettle with salt and vinegar.
    Cook applesauce until it turns reddish.
    Add sugar (takes about 1 hour).
    Cook 1 hour more.
    Seal in jars.
    Makes 84 quarts.
