Wyatt'S Eggplant Casserole - cooking recipe

Ingredients
    1 lb. eggplant
    1/2 lb. bread crumbs
    1/2 c. evaporated milk
    1/4 c. whole milk
    1/2 stick oleo
    1/4 c. chopped onion, celery and pimento
    2 eggs, slightly beaten
    2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. sage
    1/8 tsp. Accent
    1 1/2 c. grated Cheddar cheese
Preparation
    Peel and cube eggplant.
    Boil until tender, about 30 minutes. Mix together crumbs and milks and add to vegetables that have been sauteed in the oleo.
    Add remaining ingredients (except cheese). Bake in greased casserole dish 35 minutes at 350\u00b0.
    Add cheese and bake another 10 minutes.
