Amish Country Funnel Cakes - cooking recipe

Ingredients
    2 eggs, beaten
    2 c. milk
    4 c. sifted flour
    1/3 c. sugar
    1/2 tsp. salt
    1 Tbsp. baking powder
    shortening (for deep frying)
    confectioners sugar
Preparation
    Beat eggs with milk, gradually beat in flour, sugar, salt and baking powder until very smooth.
    Holding the opening of the funnel closed with your fore-finger, fill the funnel with batter. Controlling the flow with your fore-finger, dribble the batter into hot oil, starting at the center of pan and swirling batter outward in a circle.
    Fry 2 or 3 minutes or until brown.
    Drain on absorbent paper and sprinkle with confectioners sugar.
    Makes about 2 dozen cakes, depending on size.
