Hominy Tamale Casserole - cooking recipe
Ingredients

1 lb. ground meat, fried
1 small onion, chopped fine (optional)
1 clove garlic, crushed (optional)
1 Tbsp. oil
1 can yellow or white hominy
1 can tamales
salt to taste
pepper to taste
1/4 c. grated white or yellow cheese
Preparation

Fry onion, garlic and hominy until onion is clear and hominy starts to pop.
Add ground meat and warm.
Put in tamales, whipping as much juice off the papers into the pan as possible. Mix and cut up the tamales; cook until all are warmed through. Can be put in oven to bake for 20 minutes or just left to cook in frying pan.
Top with grated cheese and serve with a green or fruit salad, French bread and green vegetable.
