3 Cheese Spinach Roll-Ups - cooking recipe

Ingredients
    8 fluted lasagna noodles
    3 Tbsp. butter or margarine
    1 red pepper, seeded and chopped
    1/2 c. chopped onion
    2 (10 oz.) pkg. frozen spinach, chopped, cooked, squeezed and briefly sauteed
    2 c. shredded Mozzarella cheese
    3/4 c. Ricotta cheese
    3/4 c. Parmesan cheese
    1 slightly beaten egg
    1/2 stick butter or margarine
    1/4 c. flour
    1/8 tsp. pepper
    1/2 tsp. salt
    1 c. milk
    1 c. half and half
Preparation
    Preheat oven to 375\u00b0.
    Cook noodles according to directions. Cool in cold water.
    Set aside.
    Saute red pepper and onion until tender in 3 tablespoons of butter.
    Combine spinach, pepper, onion, 1 1/2 cups Mozzarella cheese, Ricotta cheese, 1/2 cup Parmesan cheese and egg; set aside.
