Baked Rice - cooking recipe

Ingredients
    1 medium onion, finely chopped
    1/4 c. margarine
    1 c. rice
    1 (20 oz.) can tomatoes
    dash of cayenne pepper
    1/2 tsp. salt
    1 1/2 c. grated Cheddar cheese
Preparation
    Saute onion in margarine in skillet.
    Add remaining ingredients, except 1/2 cup cheese, with 1 cup boiling water; mix well.
    Pour into greased 2-quart casserole.
    Cover; bake at 350\u00b0 for 30 minutes.
    Stir well; sprinkle with remaining cheese.
    Bake, uncovered, 45 minutes longer.
    Yields 6 servings.
