1 pkg. (6-oz) stuffing mix
1/2 c. Peach Preserves, divided
4 pork chops (1/2- inch thick)
2 Tbsp. oil
1 can (8-oz) sliced peaches, drained

Preheat oven to 350\u00b0.
Make stuffing mix according to package directions, decreasing water by 1/4 cup; stir in 1/4 cup preserves. Spoon stuffing into ungreased 1-quart casserole.
Brown pork chops in oil over medium heat.
Arrange pork chops and peaches over stuffing.
Spoon remaining 1/4 cup preserves over chops.
Cover and bake for 45 minutes to 1 hour or until pork chops are tender. Garnish with parsley.
