Chinese Beef And Broccoli - cooking recipe

Ingredients
    2 Tbsp. peanut oil (approximately)
    1 tsp. salt
    1 to 2 cloves crushed garlic
    1 Tbsp. fresh ginger root, minced
    1 1/2 lb. sirloin tips or flank steak, sliced
    1 head broccoli, cut into flowerets
    2 Tbsp. medium dry sherry
    1 Tbsp. medium soy sauce
    5 Tbsp. chicken stock
    1 Tbsp. cornstarch

Preparation
    Heat wok or skillet on high.
    Add oil; when hot, add salt, garlic and ginger.
    Remove before they burn.
    Add beef; cook until tender.
    Add broccoli and cook about 2 minutes, until crisp.
    Add sherry, soy sauce and chicken stock.
    Add cornstarch in water. Stir-fry 10 to 30 seconds until slightly thickened and glossy. Serve over rice.
