Roasted Leg Of Lamb With Garlic - cooking recipe

Ingredients
    1 leg of lamb (7 1/2 lb.)
    2 Tbsp. lemon juice
    3 cloves garlic
    2 tsp. rosemary
    1 Tbsp. paprika
Preparation
    Preheat oven to 400\u00b0.
    Place lamb on rack in shallow roasting pan.
    Rub with lemon juice.
    Mash garlic and rosemary together. Make little slits outside of lamb and stuff with garlic and rosemary mixture.
    Sprinkle lamb with paprika.
    Roast at 400\u00b0 for 15 minutes.
    Reduce heat to 325\u00b0; insert meat thermometer and continue cooking until thermometer registers 10\u00b0 below desired doneness (about 1 hour and 50 minutes). Remove from oven; let stand 15 minutes.
    Serve with mint jelly, mint sauce or Port wine sauce.
    Makes 8 servings.
