Surprisin Carrot Cake - cooking recipe
Ingredients

2 c. flour
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. salt
3 eggs
1 1/2 c. sugar
3/4 c. mayonnaise
1 oz. can crushed pineapple in juice (undrained)
2 c. shredded carrots
3/4 c. chopped walnuts
Preparation

Grease and flour 2 round pans.
In bowl, stir together first 5 ingredients.
Set aside.
In large bowl with mixer at medium speed, beat next 4 ingredients.
Gradually beat in flour mixture until well mixed.
With spoon, stir in carrots and walnuts.
Turn into prepared pans.
Bake in 350\u00b0 oven for 30 to 35 minutes or until cake is done.
Cool in pans 10 minutes.
Remove, cool, fill and frost with 2 cups whipped cream.
