Cornish Hens Tarragon - cooking recipe

Ingredients
    1/3 c. tarragon vinegar
    4 cloves garlic
    4 green onions
    1 Tbsp. sugar
    2 tsp. Dijon mustard
    2 tsp. salt
    1 1/2 tsp. freshly ground pepper
    1 tsp. fresh tarragon (optional)
    2 c. vegetable oil
    6 Cornish game hens
Preparation
    Combine all ingredients, except oil and hens, in a food processor. Blend until smooth. With machine running, gradually add oil until mixture is thick. Cut the hens in half and remove the backbone. Rub the mixture into the hens and marinate at least 2 hours or overnight in the refrigerator.
