Mexican Meat Loaf - cooking recipe

Ingredients
    2 lb. ground beef
    16 oz. jar thick and chunky salsa (choice of mild, medium or hot)
    2 eggs
    2 c. bread crumbs
    salt and pepper (optional)
    shredded cheese (optional)
Preparation
    In a medium mixing bowl, combine ground beef, 1/2 jar salsa, eggs and bread crumbs.
    Season.
    If adding cheese, do so now. Press into loaf pan.
    Pour remaining salsa on top.
    Bake to 350\u00b0 for 1 to 1 1/2 hours.
