Ingredients

4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
3 Tbsp. lemon juice
6 lb. sliced, peeled tart apples
Preparation

In a large saucepan, blend together sugar, cornstarch, cinnamon, nutmeg and salt.
Stir in 10 cups water.
Cook and stir until bubbly.
Add lemon juice.
Pack apples (really cram them in as they cook down) into hot jars.
Fill with hot syrup; seal. Process in boiling water bath for 20 minutes.
Makes 6 to 7 quarts.
