Carrot Applesauce Cake - cooking recipe
Ingredients

2 3/4 c. flour
3 tsp. baking soda
1 tsp. salt
3 tsp. cinnamon
1 tsp. nutmeg
4 eggs
3/4 c. oil
2 c. sugar
1 tsp. vanilla
2 c. applesauce
3 c. grated carrots
1 c. Golden raisins
1 c. chopped walnuts
Preparation

In a large bowl mix the dry ingredients.
In a separate bowl beat
eggs.
Stir
in oil, sugar and vanilla.
Add applesauce
and carrots.
Mix well.
Add to flour mixture, stirring just to moisten.
Fold
in
raisins
and
half of nuts.
Pour batter in greased
pan.
Sprinkle
on
the
rest of the nuts. Bake at 350\u00b0 in
a
tube
pan for 65 minutes or in a 13 x 9 x 2-inch pan for 45 minutes or makes about 35 cupcakes (bake for 20 to 25 minutes).
